Are Experience Edge functionalities only available for Sitecore content definitions?
You must have a Content Operations license to use Experience Edge. When your Content Operations license is active, you can extend Experience Edge functionality to other definitions.
If you are a superuser, you can extend content collections with other definitions and configure them for publishing. For an example of how to extend content collections, see Extend content collections for products.
Is there any logging on key creation and key usage?
No, there are no logs available.
Without permissions for Experience Edge, can a role generate API tokens?
No. When a role does not have permissions for Experience Edge, that role cannot generate API tokens. See Permissions.
Which license do I need to use Experience Edge?
You need both the Experience Edge license and the Content Operations license. See Licensing.
